Culinary Basics


Offered in partnership with the
Washington State college system.

Four options available in English in early 2026!

Option One: January 24 (Saturday) AND January 26 (Monday) - 8:00 am to 4:30 pm Registration for this class closes January 3, 2026.

Option Two: February 23, 24, 25, & 26 (Monday to Thursday) 4:00-8:00 pm Registration for this class closes February 2, 2026.

Option Three: March 30-April 1 (Monday to Wednesday) Monday, 3/30 9:30 am to 4:00 pm AND Tuesday, 3/31 9:30 am to 3:00 pm AND Wednesday, 4/1 9:30 am to 3:00 pm Registration for this class closes March 9, 2026.

Option Four: April 25 (Saturday) AND April 27 (Monday) 8:00 am to 4:30 pm Registration for this class closes April 4, 2026.

All classes will take place at our teaching classroom on Capitol Hill.

Topics include:

  • Food safety and sanitation.

  • Safe knife handling.

  • Practice knife skills.

  • Frequent cooking methods.

  • Plating.

You need to have a current food worker card. You should also plan to wear no-slip black shoes and well-fitting clothing or the uniform that is provided by your employer. If you have longer hair that should be tied back. Last, you should plan to clear your schedule so you can attend all the days of the training.

Lunch will be provided each day. Tools, such as knives to be used during the course, will also be available for use during the program. A $341 stipend will be awarded to workers who complete all 16 hours of the Culinary Training.

Eligible participants are current employees of partner employers who are also members of UNITE HERE! Local 8. See the Jobs link for the list of partner employers. Eligible participants are those who have not taken this course in the last 18 months.

Stipends will be issued at the end of each course and will require completion of a W9. Participants should plan on a few weeks for the stipend payment to be processed. It is not available immediately after training.
